The processes of making a corn chip starts with the nixtamilisation process that began with the Ancient Aztecs. The definition of Nixtamal describes the cooking and soaking of corn. The corn is usaully soaked in an alkaline stone lime solution. The corn is then cooked and it rests overnight in this solution. After this, the corn is washed and then it is ground using stones. This Masa is then pressed and cut into shapes before it goes from cooking to packaging all in one simple production line.
The first cook of the masa is done in an oven. The chips are then moved through the oven on a tray that flips them several times. The chip are then fried and packaged.
